The main properties of monococco spelled have been extensively studied by CRA and, in particular, are:
a high protein content;
a high content of ash and trace elements (iron, zinc, magnesium, phosphorus, potassium etc.);
a low presence of saturated fatty acids;
a low starch content and better digestibility;
a high presence of antioxidants and yellow pigments (carotenoids, including beta-carotene, precursor of vitamin A);
a high content of tocoli (vitamin E).
The single-spelled spelled flour is highly recommended for baked products, in fact, since the gluten is not very tenacious, the dough obtained is crumbly and therefore suitable for making shortbread and dough for bread and pizzas.
